I made mocha brownies today. I completely wung it and I was told that I did an outstanding job. :D

  • 1 1/2 c strong coffee or espresso
  • 3/4 c. semi-sweet chocolate chips
  • 1/4 c. milk
  • 8 T. butter (very soft, a wee bit of melting is fine)
  • 1 egg
  • 2 egg yolks
  • 1/4 c. cocoa powder
  • 1 1/2 c. sugar
  • 2 1/4 c. flour
  • 1 1/4 tspn. baking powder
  • 1 tspn. vanilla extract
  • chocolate chips
  • confectioners’ sugar

Preheat oven to 350 degrees and grease and flour a brownie pan. Heat 3/4 c. chocolate chips over boiling water. as they begin to melt, add 3/4 coffee and milk and stir well. Continue to heat until the chocolate is melted, then turn off the stove.

In a large bowl, sift together the dry ingredients.

In another bowl, mix the egg, egg yolks, and vanilla.

Add the wet ingredients to the flour mixture by fourths, alternately. Stir between additions. Stir the batter until it is smooth, then pour into pan.

Revisit the stove with more chocolate. Melt some chocolate chips by the same method used previously, and add some of the left over coffee. When the mixture becomes smooth, begin to gradually add in confectioners’ sugar. There are no measurements for this part of the recipe- just go according to taste. When you achieve the product you want, swirl it through the batter with a spoon.

Bake until a knife inserted in the middle comes out clean of any brownie batter (but take into account the swirls of the chocolate mixture will stick to the knife even when the brownies are done.)

This should take about 25-30 minutes for thinner brownies, or 45-55 for thicker ones.
